The classic Pecorino Romano DOP produced with thermised milk from sheeps of Sarda breed. The rind is straw yellow, covered with a black coat; the paste is hard with few eyes, white or pale yellow in colour. The taste is intente, savoury and with notes of milk.

Pecorino Rosso
A pecorino aged 40 days, produced by Cugusi dairy with pasteurised sheep’s milk obtained from property herd and from 4 local shepherds. The rind is red because it is treated with tomato sauce. The paste is soft to semi hard and its color is white to ivory. Small eyes are scattered across the paste. The taste is long, buttery and round. The aftertaste is round, slightly acid however dolce due to the butter of the milk.

Pecorino Semistagionato
Pasteurized sheep’s milk cheese exclusively from the Maremma area. The shape is cylindrical and the rind is thick. Its color is medium to dark yellow. The paste is compact, without any eyes, and its color is ivory. The taste is dolce, round and creamy. The aftertaste is long, dolce, creamy with hints of grass and nature.

Pecorino Tumarrano
Whole pasteurized sheep’s milk cheese. The rind is semi hard with the pattern of the basket (canestro) the cheese is made in. The pasta is compact and its colour is white. The taste is full of the palate , buttery, strong and pleasant while the aftertaste is long, buttery, round with strong hints of herbs from the Sicilian land.

Pecorino with orange peel
Low pasteurized cow and sheep’s milk cheese, flavored with peels of Sicilian oranges. The paste is compact, ivory yellow coloured, with the evident presence of orange peels. At the nose if offers orange and Mediterranean notes; to the palate it is sweet, fresh,slightly sapid, pleasantly citrusy and well-balanced.

Pecorino with pepper
Raw milk cheese from Comisana and Valle del Belice sheeps, added with local lamb rennet. The crust is thin and presenst the sign of canestro (basket) , it has evident pepper grains; texture is compact, ivory coloured with little scattered wyes. The taste is mild with pleasant floreal and grass hints; the notes linked to pepper are aromatic and delicate.

Raw sheep’s milk cheese coming from only one farm in Sardinia. Slightly smaller, taller and thinner than classic Sardinian pecorinos. The rind is thin and its color is straw yellow. The paste is compact and some flakey. The color of the paste is golden straw. The taste is buttery, intense, long and aromatic. The aftertaste is long, buttery, slightly piccante with strong hints of toasted hazelnuts.
